Rice Krispie Mini Pumpkin Pie Recipe Ingredients

Outside “crust” portion of pie

1 & 1/2 bags of mini marshmallows (Total 24 oz.)
5 tbsp. unsalted butter
6 cups rice krispie cereal to make the classic rice krispie treats

Inside “pie filling” part ingredients for Rice Krispie Pumpkin Pie recipe:

1/2 bag of mini marshmallows (8 oz. total)
3 Tbsp. butter
1 tsp. pumpkin pie spice (optional but makes them taste like real pie)
3 cups Rice Krispie cereal
Few drops of orange food coloring for the deeper orange color

You will want to grab mini muffin tins to make these for best results. A large mixing bowl will help you whip up these Thanksgiving treats in no time. These cute little pumpkin pies are going to be a hit with the whole family.

Rice Krispie Mini Pumpkin Pie Recipe Instructions:

Start out by making the crust portion. Generously grease a regular sized muffin pan.
On medium heat, melt butter and marshmallows in a large pot. Continue stirring until the marshmallows are all melted.
Remove from the heat and quickly add in the rice krispies. Mix well. Using a cookie scoop, scoop the mixture into each muffin cavity. It’s very sticky so you may have to grease the scoop. To make the indention in the middle where the pie filling will go I used a ¼ cup-measuring cup. You will have to press hard to get a nice indention.

Next to make the pie filling portion, melt butter, pumpkin spice and marshmallows in a pot over medium heat.
Continue stirring it until all is melted and well combined.
Remove marshmallow mixture from the heat.
Add in the orange gel food coloring until you reach your desired color.
Add in the rice krispies cereal and using a cookie scoop transfer the filling into each crust.
Use your hands to firmly pack down the filling so it’s flat.
Allow to cool for about 1 hour before serving. Top with whipped cream and enjoy this easy recipe!
